Sardine with Parsley and Couscous

Sardine Parsley Salad with Couscous

Ingredients:

For the marinade:

3 parts extra virgin olive oil

1 part fresh lemon juice

Chopped onion

Chopped parsley

Asteroid anise

Chopped marathon

Salt

White pepper

Filleted anchovy

For the parsley salad:

Chopped parsley

Tomato sachet

Chopped mint

Chopped onion

Chopped fresh onion

Extra virgin olive oil

Fresh lemon juice

Salt

Pepper

Florina pepper

Method of preparation:

For the sardine:

Fillet the fish, wash them well and let them drain. Spread them in a pan with the skin facing down, put them in the marinade ingredients.

Fill the two fillets with a mixture of chopped parsley, garlic, olive oil, toast, and a little of the sardine marinade. We pass them through a skewer and bake on high heat.

 

For the parsley salad:

Mix with the ingredients and leave for about an hour to combine the flavours.
